  3. Combine zucchini, 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese, Parmesan cheese, and eggs. Press into a greased 13×9-inch baking dish. Bake for 20 minutes.
  4. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce, oregano, and garlic powder; spread over zucchini crust.
  5. Sprinkle with remaining cheeses. Bake, uncovered, until heated through, about 20 minutes longer.

2. Crustless Spinach Quiche

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 cup mushrooms, sliced
  • 10 ounces fresh spinach, washed and chopped
  • 5 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and mushrooms; cook until softened. Add spinach and cook until wilted. Remove from heat.
  3. In a medium bowl, beat eggs. Stir in mozzarella, Parmesan, salt, and pepper. Add spinach mixture and stir until well combined.
  4. Pour into a greased pie dish. Bake for 25-30 minutes or until set and lightly browned on top.

3. Low-Carb Lasagna

Ingredients:

  • 1 pound ground beef
  • 1 cup ricotta cheese
  • 1 egg
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce (no sugar added)
  • 1 large zucchini, sliced thinly

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until no longer pink; drain. Stir in marinara sauce.

Ingredients:

  • 4 boneless pork chops
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 egg, beaten

Instructions:

  1. Preheat air fryer to 375°F (190°C).
  2. In a shallow dish, mix almond flour, Parmesan cheese, paprika, garlic powder, salt, and pepper.
  3. Dip each pork chop in beaten egg, then coat with the almond flour mixture.
  4. Place pork chops in a single layer in the air fryer basket. Cook for 12-15 minutes or until internal temperature reaches 145°F (63°C), flipping halfway through.

5. Baked Chicken and Mushrooms

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth
  • 1/2 cup sherry
  • 1/4 cup chopped green onions
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Brown chicken breasts on both sides; transfer to a baking dish.
  3. Add mushrooms to the skillet and cook until softened. Stir in chicken broth, sherry, green onions, paprika, salt, and pepper.
